Overnight oats are great for a healthy morning breakfast or to grab and go as a snack. One of my favorites is these peanut butter chocolate overnight oats. But I thought I’d try something new this week! This one calls for blueberries, chia seeds, Greek yogurt, almonds, and some honey! I like using frozen blueberries because the juice drips into the Greek yogurt and sweetens it up!
The oats provide fiber and whole grain, the greek yogurt provides protein, the chia seeds provide fiber, protein and healthy fat, blueberries (are delicious!) and provide antioxidants and several vitamins, and almonds are a rich source of vitamin E, calcium, phosphorous, iron. magnesium and more!
For you 21 Day Fixers, this is 1 yellow, 1/2 red, 1 orange, and 1/2 purple!
1/3 cup old fashioned oats
1/2 Tbsp Chia Seeds
1/3 cup Greek Yogurt
1 tsp honey (optional)
1/2 cup frozen blueberries
1 Tbsp sliced Almonds
- Layer the overnight oats in this order: oats, chia seeds, greek yogurt, honey, blueberries, almonds.
- Place in fridge overnight or for 6 hours.
- Stir it up! Enjoy cold or warm it up!
