Garlic shrimp stew is a popular Brazilian dish but since it’s a bit hot out for stew I am bringing you a cleaned up version of garlic lime Brazilian shrimp complete with Brazilian Rice! You may know Brazilian rice is white rice but since white rice (and white breads, pastas, etc) strip the nutrients from the food, we are going to make a simple swap and go whole grain and use brown rice! It’s still delicious!
This is a super quick recipe to whip up! This makes 3 servings and for you Container Counters it’s 1 red, 1/2 green, 1 tsp, and 1 yellow per serving!
1 lb of shrimp, thawed and peeled
3 tsp extra virgin olive oil
1 small purple onion, chopped
1/2 red pepper chopped
1/2 tsp Pink Himalyan Sea Salt
1/4 tsp Crushed Red Pepper
1/4 tsp black pepper
2 cloves of garlic, chopped
2 Tbsp Lime Juice
1 Tbsp Fresh Cilantro
1.5 cups steamed brown rice
- Heat the olive oil in a pan over medium heat. Add the garlic ( 1 clove), onion (save about 1/4 of it for the rice) and red bell pepper and sauté until soft and fragrant, about 2 minutes. Add the salt, red pepper and black pepper.
- Stir in the shrimp and cook for an additional 4-5 minutes until the shrimp is pink and cooked through.
- Add 1 Tbsp lime juice and cook for about 1 minute more, until the onions start to soften. Stir in the cilantro.
For the rice- once you have the steamed brown rice, add in the other Tbsp lime juice, remaining garlic and onion, and add a few twists of Himalayan Sea Salt. Stir and top with some fresh cilantro!
