Pudding makes me think of Snack Packs and how much I used to love them! I could eat an entire bucket of pudding 🙂 So when I saw this chocolate chia pudding in the Fixate cookbook I couldn’t resist!
I could hardly wait overnight to eat it(let alone all day)! The following recipe is for 3 servings(1 serving is pictured above). On the 21 Day Fix this is 1 yellow, 1/2 purple, and 1/2 orange:
1 1/4 cups unsweetened almond milk
3 Tbsp chia seeds
3 Tbsp organic unsweetened cocoa powder
1 Tbsp pure maple syrup
3/4 tsp pure vanilla extract
1 twist Pink Himalayan Sea Salt
1 1/2 cups chopped strawberries
1. Combine almond milk, chia seeds, cocoa powder, maple syrup, vanilla extract, and salt in a bowl and whisk for 2 minutes (until cocoa powder is blended)
2. Let sit at room temperature for 30 minutes. Mix well. Refrigerate for at least 4 hours or overnight!
3. Stir before serving- serve into 3 equal portions and top with 1/2 cup strawberries!
