I could literally eat oatmeal for every single meal! Especially this chocolate peanut butter oatmeal. 🙂 A little chocolate peanut butter swirl action! I make this chocolate peanut butter oatmeal a lot for a snack or an hour or so before a workout the really pump me up! Plus, anything that is chocolate and peanut butter is delicious in my book!
For the 21 Day Fix this is 1 yellow, and 2 tsp. If you use the banana it is also 1 purple!
1/4 cup quick cooking steel cut oats
3/4 cup water
1 Tbsp raw cocoa powder
2 tsp natural peanut butter
1/2 tsp pure vanilla extract
A dash of cinnamon
A twist of Himalayan Sea Salt
1/2 a small banana or 1 scoop pure stevia leaf extract
1. Boil water, add oatmeal and if using a 1/2 a banana, add this as well (cut into small pieces)
2. Turn heat on low and cook 5-7 minutes until liquid is absorbed.
3. Let sit for 2 minutes.
4. Mix in cocoa powder, vanilla extract, cinnamon, and salt (and pure stevia leaf extract if using this as the sweetener).
5. Swirl in natural peanut butter and enjoy!
