Something I had seen but kept putting of making was cauliflower rice! I was skeptical if it would taste good, and was just plain being lazy! So when I saw it already chopped up (thank you Trader Joes), and since I am doing the 21 Day Fix Extreme Countdown to Competition Plan (hello low carb). I decided to try it! AMAZING!!
Now, I would say the favor really makes it! I make cilantro lime brown rice all the time and love it so I thought I would do the same with cauliflower!
I’ve been using it- well just like rice duhh! The best part about cauliflower rice is you can eat a lot of it for a little calories! 2/3 cup has only 25 calories….drop the mic.
Today I paired it with blackened cod and steamed broccoli and onions. Now this is a great way to get a ton of veggies in!
So, it is really easy to make!! You can buy it already chopped up if you are lazy like me, or buy a head of cauliflower!
1 head of cauliflower
2 cloves garlic
Juice of 1 lime
1/4 cup cilantro
Pink Himalayan Sea Salt
- Chop cauliflower head into florets and put in a food processor.
- Blend until it looks like rice.
- In a medium pan, add cauliflower and garlic
- Cook for about 5 minutes until slightly browned
- Add the lime juice, cilantro, and salt to taste
This makes the perfect side!!
I had mentioned my Countdown to Competition meal plan and here it is!! It is 2 low carb, very high protein days, followed by 2 normal 21 Day Fix Extreme eating days. This is especially hard for me being vegetarian, so I have some repeats each day! But I actually stay really full on the plan due to the amount of protein.
