Guacamole is sure to satisfy everyone since it’s made mostly from avocados. Some people steer clear of avocados because they are high in fat- but it’s one of the good kinds (monosaturated!) Healthy fats, like those in avocado, are the types of fat you want to include in your diet and eat on a regular basis. That healthy fat will also help keep you full.
Avocados are also full of vitamin K,vitamin E, the B vitamins, potassium and fiber. There are tons of ways you can eat guacamole. I like topping my homemade chipotle with guacamole or enjoying with fresh veggies or whole grain crackers or tortillas. Just watch not to over do it on the crackers/tortillas! I’ve seen a salmon topped with guacamole recipe I need to try next.
2 ripe avocados, pits removed
1/2 large tomato
1/2 large onion
2 cloves of garlic
Juice of 1 lime
2 Tbsp cilantro, chopped
- Scoop the avocados out into a medium bowl and mash until smooth. Or if you are lazy like me, stick them in the food processor and mix.
- Chop tomatoes, onion, garlic, and cilantro and stir into avocado.
- Mix in juice of 1 lime and a couple twists of Himalayan sea salt.
I hope you enjoy this easy guacamole recipe and make it for your next party or gathering!
