This is my absolute favorite recipe to make for breakfast on the weekends, during the week, for dinner…any time! Did you know the average American eats over 50 eggs/year? Good thing because eggs are one of the healthiest, most nutritious food out there packed with protein and vitamins such as vitamin A, the B vitamins (folic acid, biotin, B5, B12, B2), vitamin D, Vitamin E, calcium, and the list goes on! This meal also packs creamy good fats in avocado, and veggies in the salsa (not to mention the spicy salsa revs your metabolism!)
This is a simple recipe that is actually from the T25 nutrition plan! I did slightly modify it, but once I tried it, I was in love. This meal with fill you up and keep you from feeling hungry!
3 egg whites (1/2 cup)
1/5th of an avocado
2 Tbsp of salsa
For the 21 Day Fix this is 1 red, 1/2 blue, and 1/4 purple.
1. Use a small to medium non-stick pan or spray a pan with non-stick cooking spray (preferably olive oil).
2. Turn the burner on to medium heat and crack the egg and add the egg whites to the pan.
3. ScRaMbLe those eggs!
4. Chop the avocado into bite sized chunks and add the salsa.
5. Add the cooked eggs and mix it all together!
