I have been OBSESSED with kale lately! And why not, it is full of tons of amazing vitamins and nutrients like calcium, vitamin C, vitamin K, vitamin A, folate, and the list goes on! I’ve moved on from my kale chips and have now made a a hearty Greek kale salad! This is vegetarian but you can easily add in a grilled protein like chicken or fish if you like! It does fill you up though on it’s own. This was a nice change up from my usual spinach and peppers salad and I kept the dressing to a minimum because of all the flavor already in there.
Ingredients – 1 serving
For the 21 Day Fix this is 3 Green, 1 Yellow, and 1/2 Blue.
2 cups of chopped kale
1/3 cup chopped tomato
1/3 cup chopped cucumber
1/3 cup chopped red onion
1/2 cup garbanzo beans
2 Tbsp feta cheese
Dressing: 1 Tbsp Red Wine Vinegar and Fresh Lemon Juice
Add the kale to a medium salad bowl. Add in the garbanzo beans, tomato, onion, cucumber, and feta, mix well and sprinkle with red wine vinegar and lemon juice! Enjoy!
