I love Panera’s Mediterranean Veggie sandwich, so I decided to do a copycat version of it and make my own at home! Mmmm I love Mediterranean! Probably one of my favorite food types. 🙂 This sandwich is super simple to make and requires no cooking (unless you want to cook the red peppers!) I use hummus, but homemade pesto would be good as well!
2 slices of Ezekiel Whole Grain Bread
1 Tbsp Hummus (I used this roasted red pepper hummus)
1 Tbsp feta cheese
4 large romaine pieces
3-4 tomato slices
1/4 sliced onion
1/2 a medium cucumber sliced
5 slices of red bell pepper
For the 21 Day Fix 1/2 the sandwich is 1 yellow, 1/4 blue, 1 green.
1. Take 1 slice of bread and spread hummus on it.
2. Place lettuce and tomatoes on top of the hummus.
3. Take the other slice of bread and place cucumbers, onion, red bell pepper on it. Sprinkle with feta.
4. Combine the sandwich and cut in half! Enjoy half or whole.
