We are always on the go in the summer! I LOVE eggs but only have time to make them on the weekends! So I made these veggie egg muffins that I can take with me as a snack on the go!
(Makes 3 servings, 2 egg muffins is a serving)
For the 21 Day Fix this is 1 green and 1 red
3 whole eggs
3/4 cup egg whites
5 oz of fresh baby spinach, chopped
1/2 medium red bell pepper chopped
1/2 red onion chopped
A dash of Himalayan Sea Salt
Nonstick cooking spray
1. Preheat oven to 375F.
2. Spray muffin tin (6 cups) with non-stick spray.
3. Place eggs and egg whites in a large bowl and add a dash of Himalayan Sea Salt. Whisk.
4. Add spinach, bell pepper, and onion. Mix well.
5. Pour egg mixture evenly over 6 cups.
6. Bake for 20 minutes!
