Saturdays and Sundays are the days I sit down and do my weekly meal plan and prep. I make a meal plan, go grocery shopping and prep my (and Eric’s) food for the week. I like to meal plan and go grocery shopping Saturday to break it up and the food stores always seem to be packed on Sundays! Sundays, I meal prep for the week. I usually set aside an 1/2 hour to an hour depending on what I am making for the week.
I finished up this weeks meal prep and pictured below are my breakfast, lunch, and two snacks for Monday-Thursday of this week! I am heading into Week 3 of month 2 of Insanity Max 30, so I know I need to fuel myself right! Dinner is not pictured but on Monday and Tuesday will be sofritas with spinach, tomato, and garlic lime quinoa. Wednesday and Thursday will be Mediterranean flounder, with sautéed kale and peppers, with a sweet potato. I don’t like eating leftover fish for more than one day, so Wednesday I will quickly bake the fish.
Of course before I meal prepped, I laid out a plan. I like drinking my shakeology for breakfast to refuel body post workout and also it’s easy to make and drink while getting ready for work. Saturday and Sunday I like the good old eggs and toast for breakfast and I’m always craving sweets as the day goes on. I love ice cream so I often make shakeology ‘nice cream’ for lunch on the weekends.

The week throws us curveballs, so I don’t always stick to the plan exactly. Especially not the weekends, I usually eat dinner out either Friday or Saturday. I like having a plan to fall back onto though.
Eating out these days can be healthy!! I always check the menu/nutrition before hand and decide what I’m getting. That way there is no temptation at the restaurant.
